Рецепт Black Bean Soup (Delicious!!)

Ингредиенты
- 1 1/2 c. dry black beans, washed
Инструкции
- Soak overnight in 4 1/2 c. water. 1-2 carrots, slivered 1 lg. onion, minced 2 tbsp. oil
- Saute/fry till tender. Add in 2 1/2 c. water to vegetables and add in vegetables to soaked beans (retaining bean water). (Total 7 c. water)
- Add in: 2 tbsp. cilantro (coriander leaf) 1 tbsp. cumin 2 tbsp. Tamari Juice of 1 lemon
- Simmer over low heat till beans are tender (1 1/2 - 2 1/2 hrs). Remove bay leaves. Remove 1-2 c. of beans only and mash with fork. Return to soup. (This thickens the soup.)
- Options: Add in 1 teaspoon warm pepper sauce, sea salt and/or possibly fresh grnd pepper. Garnish with minced scallions.
