- 1/2 lb Pinto beans -- dry
- 1 x Onion -- minced
- 1 x Salt pork -- about 1/2" wid
- 1 x Tomato -- minced
- 1/2 tsp Oregano
- 2 x Garlic -- chopped
- 1 Tbsp. Chili pwdr
- 1 x Pepper, Poblano -- seeded And
- 4 x Bacon -- minced
- 2 Tbsp. Cilantro -- minced

- Ea salt ea pepper Soak beans, cover with water in a medium kettle for two hrs. Add in salt pork and bring to a boil over medium heat. Reduce heat, cover and cook 1 1/2 to 2 hrs.
- Add in salt, pepper, oregano, and chili pwdr and continue to simmer. Saute/fry bacon, onion, garlic, tomato,Poblano pepper and cilantro for approximately 10 min. Add in to beans and simmer an additional 30 min or possibly till beans are tender.
