- 1/2 tsp salt
- 3/4 c. basmati rice
- 1/2 med lemon
- 1 Tbsp. minced fresh thyme
- 1 pch freshly-grnd white pepper

- In a medium pot, bring the water to a boil. Add in the salt and basmati rice. Grate the rind from the lemon and add in it to the rice. Squeeze the juice from the lemon into the rice.
- Bring the liquid to a boil, then reduce heat to a simmer. Cover the pot tightly and cook for 20 to 25 min, or possibly till the rice is tender. Add in the thyme and season with white pepper.
- This recipe yields 4 servings.
