- 2 x bananas
- 2 Tbsp. honey OPTIONAL or possibly maple syrup / golden brown syrup
- 200 gm wholemeal self-raising flour or possibly 150g flour + 50g unprocessed bran
- 1 handf chocolate chips

- Mash bananas. Heat honey then whip with bananas.
- Add in any other ingredients as listed below. Add in flour last.
- Put on baking tray in desertspoonful-lumps, then bake at 180C
- (350F) for 15-20 min.
- These cookies are made using mashed bananas instead of fat. You can substitute bananas (or possibly applesauce) for fat in most cookie, cake and muffin recipes - they're healthier and tastier.
- They also make nice muffins if done in a muffin-pan - one quantity should make about 12 baby muffins. The following variations are all approximate amounts - you can vary according to taste - and as you can see the possibilitiesare only limited by your imagination!

- ORANGE & GINGER2 Tbsp. glace ginger, choppedhalf tsp. grnd gingergrated rind of 1 orange50g almond meal (optional - and use only 150g flour)
- PINEAPPLE, CARROT/ZUCCHINI & SULTANAhalf c. pineapple, choppedhalf c. carrot or possibly zucchini, gratedhalf c. sultanas
- APPLE, FIG & SPICEhalf c. pie apple (or possibly stewed apple)
- 6 dry figs, choppedmixed spice
- PINEAPPLE, COCONUT & SULTANAhalf c. pineapple, choppedhalf c. coconut, shreddedhalf c. sultanas
- PEAR, PASSIONFRUIT & DATEhalf c. pears, choppedpulp of 1-2 passionfruithalf c. dates, minced
- CHOCOLATE, ZUCCHINI & WALNUThalf c. zucchini, gratedhalf c. minced walnutsa little bit of grated or possibly finely minced chocolate
- (depends on how naugthy you want to be!)
- PEANUT BUTTER & CORNhalf c. creamed corn (one small can)
- 1-2 Tbsp. of peanut butter (depending on taste)
- PLUM & PISTACHIO1 can (400g) plums (or possibly 6 fresh), minced half c. minced pistachioshalf tsp. allspice (+ cinnamon optional)
