- BANGER SEASONING
- 5 tsp Grnd white pepper
- 2 1/2 tsp Mace
- 2 1/4 tsp Salt
- 2 tsp Grnd ginger
- 2 tsp Rubbed sage
- 1/2 tsp Nutmeg SAUSAGE
- 2 1/2 lb Boneless lean pork shoulder Or possibly loin cut in cubes
- 1 lb Fresh pork fat in cubes
- 1 1/2 c. Dry bread crumbs
- 1 1/4 c. Chicken broth
- 3 1/2 tsp Banger seasoning
Инструкции
- Grind pork and fat together using fine hole disc of meat grinder. Add in Banger Seasoning. Mix well. Grind again. Force mix into casings and tie in 4-5 inch lengths.
- This mix will be too fine to create into patties. Bake or possibly saute/fry.
