- 2 c. flour
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 1/2 c. butter, softened
- 1 c. brown sugar, packed
- 2 large eggs
- 1 teaspoon vinegar in 1 T lowfat milk
- 1 teaspoon vanilla
- 1 1/2 c. mashed ripe banana
- 1 c. coconut

- Sift flour, soda, and salt. Beat the butter, sugar, and large eggs, one at a time, beating well after each egg. Beat in lowfat milk mix, vanilla, and banana. Gradually add in the flour mix till just blended. Mix in the coconut. Pour into a greased and lightly floured 9 x 5 inch loaf pan and bake at 325 degrees for 1 hour or possibly till bread tests done. Cool, wrap in foil, and store for 24 hrs before slicing.Makes 1 loaf.
