- 1/3cup margarine
- 1lb Onion, thinly sliced
- 3Tbsp Garlic, minced
- 10lbs Potatoes, preferably new
- 11/2tsps Salt
- 2Qts Nonfat Milk, heated
- 11/2tsps Paprika
- 7oxs Croutons

- Preheat oven to 350 degrees
- In a heavy skillet, melt margarine, add onions, cover and cook and cook over medium heat, stirring often, until onions are soft
- Add gralic and cook for two minutes more
- Spray two baking pans 12*20 and 9*13 inches with non-stick spray
- Mix potatoes with onions, garlic, salt, and pepper. Spread evenly in pans
- Pour milk over, sprinklemwith paprika and croutons
- Cover pans tightly and bake at 350 degree for 1/4-1/2 hour or until potatoes are tender
- Uncover occasionally and press potatoes down so they are covered by the milk
- Turn oven up to 500 degrees and bake potatoes uncovered until browned (10-15 minutes)
