- 1/2 c. Butter, softened
- 1 1/4 c. Sugar
- 2 x Egg
- 1/4 c. Lowfat milk
- 1 tsp Vanilla extract
- 2 c. Flour
- 1 tsp Baking pwdr
- 1/2 tsp Soda
- 1/4 tsp Salt
- 1 can Apricot pie filling
- 1/3 c. Butter, softened
- 2/3 c. Brown sugar
- 1 tsp Cinnamon

- In large bowl beat the cream cheese, butter, andcsugar until fluffy. add in Large eggs one at a time. beat well afterv each, add in lowfat milk and vanilla mix well. combine flour basking pwdr, soda and salt add in to creamed mix beat until just moistened, spred half of batter into greased 9x13 pan, carefully spred apricot filling over batter, spred remaining batter over filling bake 350* 35-40 minutes.
- topping cream butter,br sugar and cinn stir in coconut spoon over cake broil 4 inch from heat 1-2 minutes( watch carefully). cold on wire rack 12-15 servings
