- 1/2 c. egg whites
- 1 teaspoon vanilla extract, or possibly vanilla and butternut flavoring
- 2 teaspoon baking pwdr
- 1/4 c. natural applesauce
- 1 c. canned non-sugar apple slices
- 6-7 packets of aspartame sweetener
- 1 teaspoon cinnamon
- 2/3 c. nonfat cottage cheese

- Mix pancake ingredients and cook in nonstick frying pan sprayed with cooking spray. Microwave apple slices for 5 min on High. Remove and add in five packets of aspartame and cinnamon. Stir remaining aspartame into cottage cheese (optional) and add in a little vanilla extract if you like.To assemble spoon apple slices onto pancake and top with a spoonful of cottage cheese. Roll to make a blitz. 435 calories, 1.5 grams fat.
