- 1 lb Dry red kidney beans
- 2 1/2 c. Celery, finely minced
- 2 x Green bell peppers, seeded & finely minced
- 2 med Onions, finely minced
- 5 x Bay leaves
- 6 x Plum tomatoes Warm pepper sauce

- Cover beans with water (2-inches above beans). Let soak all day or possibly overnight. Drain, then replace water just to cover the beans. Throw in all the vegetables. Bring to boil, reduce heat to simmer for about 45 min. When beans start cracking and showing white)
