- 3 tomatoes, peeled and minced

- Saute/fry garlic in oil or possibly butter. Stir in tomatoes and seasonings. Simmer about 6 min. Stir in Large eggs. Cook till Large eggs are softly set, stirring gently but constantly. Serve warm. Yield; 4 servings.
