- 2 c. Chiles, habaneros, minced
- 4 c. Onion, minced
- 1 c. Lemon juice
- 6 x Cloves garlic, minced
- 1 Tbsp. Cumin, grnd
- 3 Tbsp. Oregano
- 1 Tbsp. Salt
- 1 tsp Black pepper

- Combine all ingredients in a large pot and stir frequently over high heat until mix starts to boil. Reduce heat. Simmer 20 min, ladle into warm pint jars. Leave 1/2 inch headspace. Adjust lids and process in boiling water bath 15 min at 0-1000 ft. altitude, 20 min at 1001-6000 feet, 25 min above 6000 feet.
