,%20I%20opted%20to%20marinate%20for%2010%20hours.%20%20Honestly,%20I%20was%20just%20too%20tired%20on%20Friday%20to%20put%20it%20together.%20%20Sad,%20I%20know,%20but%20that's%20what%20happens%20when%20you%20stay%20up%20late%20to%20watch%20a%20Thursday%20night%20football%20game.%20%20One%20of%20the%20things%20that%20drew%20me%20to%20this%20recipe%20was%20the%20fact%20that%20I%20got%20to%20use%20my%20beloved%20juicer.%20%20No,%20it's%20not%20one%20of%20those%20high%20tech%20electric%20ones:%20%20Instead,%20it%20is%20one%20that%20I%20inherited%20after%20my%20Grandmother%20Caldwell%20passed%20away.%20%20She%20wasn't%20much%20of%20a%20cooker,%20but%20I%20hope%20that%20she%20is%20smiling%20down%20from%20heaven%20every%20time%20that%20I%20use%20it.%20%20It%20is%20definitely%20one%20of%20my%20as%20I%20scramble%20to%20grab%20Ty%20and%20Weezy%20and%20head%20out%20the%20door.%20%20It's%20a%20simple%20glass%20one,%20but%20as%20you%20can%20tell,%20I%20love%20it.%3C/p%3E%3Cp%3EI%20prepared%20the%20onion-jalapeno%20marmalade%20with%20the%20NC%20State-FSU%20game%20going%20on%20in%20the%20background.%20%20I%20was%20definitely%20tearing%20up%20while%20I%20thinly%20sliced%20my%20way%20through%202%20sweet%20onions%20(much%20like%20NC%20State%20fans%20when%20the%20game%20was%20over).%20%20It%20was%20so%20bad%20that%20I%20had%20to%20post%20a%20picture%20of%20my%20%22bowl%20of%20tears.%22%20%20The%20actual%20cooking%20process%20went%20a%20lot%20better.%20%20I%20subbed%202%20tablespoons%20of%20sliced%20jalapeno%20that%20I%20minced%20for%20the%202%20fresh%20ones%20that%20I%20original%20recipe%20required.%20%20I%20was%20a%20little%20skeptical%20as%20I%20was%20cooking,%20but%20it%20was%20actually%20really%20good.%3C/p%3E%3Cp%3ESadly%20though,%20the%20tenderloin%20didn't%20turn%20out%20so%20well.%20%20I%20don't%20know%20if%20it%20were%20the%20distraction%20of%20the%20horrible%201st%20quarter%20of%20the%20South%20Carolina-Tennessee%20game%20or%20the%20fact%20that%20I%20relied%20on%20my%20meat%20thermometer%20so%20much,%20but%20the%20tenderloin%20ended%20up%20overcooked%20and%20dried%20out.%20%20I%20was%20able%20to%20salvage%20it%20by%20making%20a%20sauce%20of%20some%20of%20the%20ingredients%20in%20the%20marinade%20to%20moisten%20it%20up%20(lime%20juice,%20djion%20mustard,%20soy%20sauce,%20cayenne%20pepper,%20ginger,%20garlic%20powder).%20%20I%20served%20it%20with%20our%20favorite%20green%20bean%20recipe%20which%20you%20can%20find%20here.%20%20I%20should've%20known%20that%20something%20that%20I%20was%20so%20excited%20about%20would%20be%20less%20than%20stellar.%20%20Isn't%20that%20how%20it%20always%20is?%3C/p%3E%3Cp%3ESo%20here%20is%20the%20recipe%20from%20my%20Vera%20Bradley%20cookbook.%20%20As%20I%20said%20before,%20the%20only%20changes%20that%20I%20made%20were%20to%20use%20sliced%20jalapenos%20from%20a%20jar%20versus%20fresh%20(and%20obviously%20overcooking%20it).%20%20If%20anyone%20has%20any%20advice%20on%20cooking%20pork%20to%20make%20sure%20that%20it%20isn't%20going%20to%20dried%20out%20but%20not%20sketchy%20either,%20I'd%20appreciate%20it!!!%3C/p%3E%3Cp%3EGrilled%20Garlic%20Lime%20Pork%20Tenderloin%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3EProcess%20the%20garlic,%20soy%20sauce,%20ginger%20root,%20Dijon%20mustard,%20lime%20juice,%20oil,%20cayenne%20pepper,%20salt%20and%20pepper%20in%20a%20blender%20or%20food%20processor%20until%20blended.%20%20Place%20the%20pork%20in%20a%20large%20plastic%20food%20storage%20bag.%20%20Pour%20the%20marinade%20over%20the%20pork%20and%20seal%20the%20bag.%20%20Place%20in%20a%20shallow%20dish.%20%20Marinate%20in%20the%20refrigerator%20for%2024%20hours%20(I%20marinating%20for%2010%20hours),%20turning%20occasionally.%3C/p%3E%3Cp%3EPrepare%20grill.%20%20Let%20pork%20stand%20at%20room%20temperature%20for%2030%20minutes%20before%20grilling.%20%20Drain%20the%20pork,%20discarding%20the%20marinade.%20%20Place%20on%20an%20oiled%20grill%20rack.%20%20Grill%205%20to%206%20inches%20above%20glowing%20coals%20for%2015%20to%2020%20minutes%20or%20until%20cooked%20through,%20turning%20every%205%20minutes.%20%20Remove%20pork%20and%20place%20on%20a%20cutting%20board.%20%20Let%20stand%20for%205%20minutes.%20%20Cut%20into%20slices.%20%20Serve%20with%20Onion%20Jalapeno%20Marmalade.%3C/p%3E%3Cp%3EOnion%20Jalapeno%20Marmalade%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3E1%201/4%20pounds%20red%20or%20yellow%20onions,%20thinly%20sliced,%20separated%20into%20rings%20(I%20used%202%20sweet%20onions)%3C/p%3E%3Cp%3E3%20tablespoons%20olive%20oil%20(I%20used%20extra%20virgin)%3C/p%3E%3Cp%3E2%20fresh%20jalapeno%20chiles,%20sedeed,%20minced%20%20(I%20minced%202%20tablespoons%20of%20sliced%20jalapenos%20from%20a%20jar)%3C/p%3E%3Cp%3E2%20tablespoons%20honey%20or%20sugar%20(I%20used%20honey)%3C/p%3E%3Cp%3E2%20to%204%20tablespoons%20red%20wine%20vinegar%20(I%20used%204%20tablespoons)%3C/p%3E%3Cp%3E1/4%20cup%20water%3C/p%3E%3Cp%3Esalt%20and%20pepper%20to%20taste%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3ESaute%20the%20onions%20in%
