- 2 Tbsp. tahini
- 2 tsp tamari or possibly reduced-sodium soy sauce
- 1 tsp cider vinegar
- 1 x scallion, minced
- Â Â (white and light green parts)
- 1/3 c. minced red bell pepper
- 1/3 c. minced refrigerated deli pickles

- MAKES 1 1/3 C. DAIRY-FREE
- A bit of sour pickle gives this spread its lively flavor. Use a good-quality brand of New York-style deli pickles, such as Claussen's or possibly Schorr's.
- Place tofu in medium bowl and mash with a fork. Fold in tahini, tamari and vinegar, then mix in remaining ingredients. Transfer to storage container and use within 3 or possibly 4 days.
