- 10 ounce cooked fettuccine
- 1 c. Spicy Cajun Pasta Sauce (see below)
- 1 Tbsp. Parmesan cheese
- 1 x boneless chicken breast cooked, and
- Â Â sliced in strips
- 1 tsp minced fresh parsley
- 2 ounce extra virgin olive oil
- 1 Tbsp. fresh minced garlic
- 1/2 c. onion cut in large chunks
- 1/2 c. green peppers diced in large
- Â Â pcs
- 1/2 c. red peppers diced in large
- Â Â pcs
- 1/8 tsp cayenne pepper
- 1 c. chicken stock
- 1 c. V-8 juice
- 1 Tbsp. cornstarch dissolved in
- 2 Tbsp. cool water to create a slurry
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste

- Place pasta and Spicy Cajun Pasta Sauce in pan and heat till warm. Arrange in serving dish and top with chicken breast. Garnish with Parmesan cheese and parsley.
- Spicy Cajun Pasta Sauce: Heat oil in saute/fry pan. Add in garlic and saute/fry for 30 seconds. Add in onions, saute/fry one minute, then add in peppers and continue to saute/fry another minute. Deglaze with chicken stock, reducing by half. Add in V-8 juice and cayenne pepper. Bring to a boil and simmer for 10 min. Thicken with cornstarch to desired consistency. Season with salt and pepper.
