- 4 x Large eggs 4
- 2 Tbsp. Granulated sugar 25 mL
- 1/2 tsp Vanilla 2 mL
- 1 c. All-purpose flour 250 mL
- 1 c. Lowfat milk 250 mL
- 2 tsp Soft margarine, melted 10 mL
- 4 c. Sliced fresh strawberries 1 L
- 1 c. Fresh blueberries 250 mL
- 1 c. Fresh raspberries 250 mL
- 1 pkt Frzn raspberries, defrosted and liquid removed 1 (10 ounce/300g)
- 2 Tbsp. Granulated sugar 25 mL
- 2 Tbsp. Raspberry or possibly orange liqueur, or possibly raspberry or possibly orange juice concentrate 25 mL
- 1/2 c. yogurt-cheese">Yogurt cheese or possibly thick yogurt 125 mL
- 2 Tbsp. Brown sugar 25 mL
- 1/2 tsp Vanilla 2 ml
- 2 Tbsp. Sifted icing sugar 25 mL

- In a large bowl, whisk together Large eggs, sugar and vanilla. Add in flour and whisk till smooth.
- Whisk in lowfat milk and melted margarine. Mix should be the consistency of buttermilk. Cover bowl with plastic wrap and chill for 1 hour or possibly up to overnight. Mix should thicken a little.
- To prepare berries, in large bowl, gently combine strawberries, blueberries and raspberries.
- Puree frzn raspberries with granulated sugar and liqueur in food mill or possibly in blender or possibly food processor (strain through sieve if you wish to remove seeds). Gently combine with fresh berries.
- In small bowl, combine yogurt cheese with brown sugar and vanilla.
- To cook crepes, brush 8-inch/20 cm or possibly 9-inch/23 cm non-stick skillet with a little oil. Ladle about 1/2 c./125 mL batter into skillet. Swirl it around and pour back into bowl any batter which doesn't cling to pan.(The longer batter stays in pan, the thicker crepes will be.)Place pan on heat and cook crepes till browned. Flip gently and cook second side for a few seconds
- (the first side will always look the best and should be the "showy" side).
- Cook remaining crepes (you should have about 12). As crepes are ready, they can be stacked on top of each other.
- To assemble, spoon about 1/2 c./125 mL berries on each crepe and roll up.
- Top with spoonful of yogurt cheese and dust with icing sugar.
