- 8 ounce fresh mushrooms (about 12, 1 1/2 inch mushrooms)
- 3 slices bacon, minced
- 1/3 c. finely minced green onions
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2-4 drops red pepper sauce (optional)
- 1/4 c. cream (lowfat milk can be substituted for lower calories)
- 1 T flour
- 2 T shredded Cheddar

- 1. Wash mushrooms. Remove stems and chop fine. Place caps on paper towel on plate. Microwave at medium-high (70%) 1 minute. Drain, set aside. Place bacon in medium bowl. Microwave on high (100%) till crisp 2 1/2-3 min. Drain. Add in mushroom stems, onion, salt, pepper, and red pepper sauce. Microwave at high (100%) till mushrooms are tender 2-3 1/2 min.2. Blend in flour, cream, stir till smooth. Reduce power to medium-high (70%). Microwave till thickened 2-3 min, stirring once or possibly twice during cooking. Stir in cheese.
- 3. Fill each mushroom cap with bacon mix. Place around the edge of a dinner plate. Microwave at high (100%) till cheese melts, 1 to 1 1/2 min. Turn plate 1/2 turn after 1/2 the cooking time. Makes about 12.
