- 1 cup water
- 1 carton (10 oz.) Chopped, Pitted Dates
- 2 teaspoons baking soda
- 3/4 cup sugar
- 1/4 cup butter
- 2 eggs
- 3/4 cup flour
- 1/2 teaspoon vanilla
- Sauce:
- 1 cup brown sugar, packed
- 1/2 cup cream
- 1/2 stick (1/4 cup) butter
- 1/2 teaspoon vanilla

%20%20This%20is%20everything%20a%20special%20dessert%20should%20be...sweet,%20rich,%20gooey,%20with%20melt-in-the-mouth%20decadent%20flavor.%20%20It%20is,%20by%20far,%20the%20most%20wonderful%20dessert%20I've%20had%20this%20holiday%20season...or%20any%20season%20for%20that%20matter.%20%20When%20the%20Aussie%20stormed%20ashore%20many%20years%20ago,%20she%20was%20introduced%20to%20the%20women's%20organization%20in%20our%20church%20at%20an%20International%20Cooking%20Night.%20%20She%20taunted%20us%20with%20her%20ANZAC%20Biscuits%20and%20Lamingtons;%20had%20our%20tongues%20wagging%20with%20her%20Pavlova%20but%20when%20she%20brought%20out%20her%20Sticky%20Date%20Pudding%20she%20had%20us%20all%20in%20the%20palm%20of%20her%20hand%20-%20we%20would%20have%20done%20anything,%20gone%20anywhere%20at%20her%20very%20command%20just%20to%20have%20another%20bite!%20%20I've%20been%20making%20it%20ever%20since%20-%20but%20only%20on%20special%20occasions%20-%20and%20what%20could%20be%20more%20special%20than%20Christmas?%3C/p%3E%3Cp%3EFirst,%20the%20dates%20are%20soaked%20in%20water%20and%20then%20while%20they%20are%20baking%20they%20are%20reduced%20to%20nothing%20but%20pure%20sweetness.%20%20This%20pudding%20has%20no%20lumps,%20no%20big%20bits%20of%20dates%20-%20they%20just%20melt%20into%20sinfulness.%20%20That%20would%20be%20enough%20right%20there%20to%20make%20one's%20tongue%20fall%20out%20but%20then%20an%20amazing%20caramel%20sauce%20is%20poured%20on%20top%20and%20allowed%20to%20soak%20in...oh%20my...and%20when%20served,%20more%20sauce%20is%20poured%20on%20top...this%20one%20gets%205%20dangs,%20it's%20dang,%20dang,%20dang,%20dang,%20dang%20good%20and%20was%20definitely%20worth%20the%20coma%20it%20induced...(sorry%20mom,%20but%20it%20was%20Christmas!%20%20I'll%20be%20better%20from%20here%20on%20out!)%3C/p%3E%3Cp%3EPreheat%20oven%20to%20325%20degrees.%20%20Grease%20the%20bottom%20and%20sides%20of%20a%207x11-inch%20cake%20pan.%20%20In%20a%20small%20sauce-pan%20bring%20add%20water%20and%20dates.%20%20Bring%20to%20a%20boil%20then%20remove%20from%20heat%20and%20add%20baking%20soda.%20%20Mix%20well%20and%20set%20aside.%20%20In%20the%20bowl%20of%20an%20electric%20mixer%20cream%20the%20butter%20and%20sugar.%20%20Add%20eggs,%20one%20at%20a%20time,%20beating%20well%20after%20each%20addition.%20%20Add%20flour%20but%20mix%20only%20until%20combined.%20%20Stir%20in%20date%20mixture%20and%20add%20vanilla.%20%20Pour%20into%20prepared%20pan.%20%20Bake%20in%20the%20center%20of%20oven%20for%2030%20to%2040%20minutes,%20or%20until%20center%20is%20set%20and%20a%20wooden%20toothpick,%20when%20inserted%20in%20center,%20comes%20out%20clean.%20%20(While%20pudding/cake%20is%20baking%20make%20the%20sauce.)%3C/p%3E%3Cp%3ETo%20make%20the%20sauce:%20%20In%20a%20small%20saucepan%20over%20high%20heat,%20combine%20brown%20sugar,%20cream%20and%20butter.%20%20Bring%20to%20a%20boil,%20then%20reduce%20heat%20and%20simmer%20for%203%20minutes.%20%20Remove%20from%20heat%20and%20stir%20in%20vanilla.%20%20When%20pudding%20is%20done,%20remove%20from%20the%20oven%20and%20pour%20a%20little%20of%20the%20sauce%20over%20the%20warm%20pudding,%20enough%20to%20lightly%20cover%20the%20top,%20then%20return%20to%20the%20oven%20for%202%20to%203%20minutes%20so%20the%20sauce%20soaks%20in%20and%20bubbles%20to%20a%20golden%20brown%20color.%20%20Cut%20pudding%20into%20squares%20and%20pass%20the%20extra%20sauce%20separately.%20%20Serve%20with%20whipped%20cream%20or%20ice%20cream%20if%20desired.%20%20Serves%2012%20(this%20is%20very%20rich%20so%20the%20servings%20are%20cut%20into%20about%202%201/2-inch%20squares).%3C/p%3E%3Cp%3EMy%20little%20friend%20Emily%20brought%20me%20a%20lovely%20Christmas%20ornament%20from%20China...feast%20your%20eyes%20on%20this:%3C/p%3E%3Cp%3EWhy%20yes...that%20IS%20Chairman%20Mao!%20%20Front%20and%20center%20on%20our%20Christmas%20tree!%20%20Little%20Em%20thought%20we%20would%20love%20this%20-%20it%20came%20in%20a%20beautiful%20little%20box%20and%20it's%20glass,%20hand-painted%20on%20the%20inside!%20%20Truly,%20you're%20jealous%20now,%20aren't%20you?!%20%20Thank%20you%20Emily%20-%20we%20DO%20love%20it%20-%20it's%20proven%20to%20be%20quite%20the%20conversation%20piece!%3C/p%3E){kind=link}
