- 2 c. brown rice cooked
- 1 c. spaghetti squash cooked
- 10 ounce frzn spinach minced, liquid removed
- 2 ounce mozzarella cheese, part skim lowfat milk shredded
- Â Â salt
- Â Â pepper
- 1/2 c. chicken broth

- Preheat oven to 400 degrees. Grease 2-qt casserole dish. In large bowl combine rice, squash, spinach and cheese; toss till combined. Season with salt and pepper. Pour into greased dish; add in chicken broth.
- Bake uncovered, about 20 min or possibly till warm and cheese is melted.
- NOTES : 1 1/2 c. packed shredded summer squash can be substituted for spaghetti squash.
