- 1/4 c. lowfat sour cream
- 2 tbsp. cream cheese
- 2 sm. frzn pack spinach
- 2 whole tomatoes
- 1 onion
- 3 cloves garlic, minced
- 2 tbsp. tomato paste
- Spices (red pepper), optional
- Salt to taste
- Rice

- Brown onion and garlic in a pan. Pour tomatoes and tomato paste and cook for 10 min. Add in lowfat sour cream and cream cheese and stir for 2-3 min. Put in some spices and dash of salt. Stir for 1 minute. Put in spinach and cook for 20 min. For a tangy taste, squeeze some lemon juices.
- Rice: Bring water to boil and cook rice.
