- 8 ounce. dry sm. pasta shells, uncooked
- 2 tbsp. butter
- 2 tbsp. flour
- 2 c. lowfat milk
- 2 c. tomatoes, minced
- 1 c. cubed feta cheese
- 1/4 pound cooked, sm. shrimp
- 3/4 c. minced green bell peppers
- 3/4 c. liquid removed black, pitted olives, sliced
- 1 tbsp. minced parsley
- 1 1/2 teaspoon chopped garlic
- 1 teaspoon oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Almond crumb topping

- Cook pasta according to package directions. Heat butter in saucepan; whisk in flour. Cook till mix is bubbly. Whisk in lowfat milk. Cook over medium low heat for 20 min, whisking often.
- Toss together liquid removed shells, sauce and remaining ingredients except topping. Spoon mix into 2 1/2 qt baking dish. Cover and bake at 350 degrees for 20 min. Remove cover, sprinkle with almond crunch topping and bake for another 10-15 min or possibly till topping is golden. Serves 4-6.
