- 1 1/2 pound fresh scallops
- 1/2 pound mushrooms
- 4 scallions, minced
- 1 green pepper, minced
- 3 T salad oil
- 1 T beef bouillon or possibly sherry
- 3 T soy sauce
- 1 T cornstarch
- 1/2 c. water
- 1/2 teaspoon brown sugar
- Salt and pepper
- Rice

- Wash scallops and set aside to dry. Chop mushrooms and put together with scallions and green pepper. Heat oil in frying pan. Add in vegetables and saute for 3 min. Add in scallops and continue to cook over low heat.In a bowl, mix bouillon, soy sauce, cornstarch, water, and brown sugar. Add in to scallop mix and blend well. Season with salt and pepper. Cook, while stirring, for 10 min. Serve on a bed of hot rice. Serves 4.
