  • 2 lb unpeeled large fresh shrimp
  • 1 1/4 c. all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp freshly-grnd black pepper
  • 1/2 c. lowfat milk
  • 1 lrg egg
  •     Peanut oil as needed
  • 1/3 c. butter
  • 1 tsp chopped garlic
  • 4 x French bread rolls split
  •     Remoulade Sauce (see recipe)
  • 1 c. shredded lettuce

  1. Peel shrimp, and devein, if you like.
  2. Combine flour, salt, and pepper. Stir together lowfat milk and egg till smooth. Toss shrimp in lowfat milk mix; dredge in flour mix.
  3. Pour oil to a depth of 2 inches in a Dutch oven; heat to 375 degrees. Fry shrimp, in batches, 1 to 2 min or possibly till golden brown; drain on wire racks.
  4. Heat butter; add in garlic. Spread cut sides of rolls proportionately with butter mix; place on a large baking sheet.
  5. Bake at 450 degrees for 8 min. Spread cut sides of rolls proportionately with Remoulade Sauce. Place shrimp and lettuce on bottom halves of rolls; cover with roll tops.
  6. This recipe yields 4 sandwiches.
