- 4 tbsp. oil
- 4 tbsp. flour
- 2 lbs. okra, sliced
- 2 cans tomatoes, cut up
- 1 bell pepper, chopped
- 2 stalks celery, chopped
- 1/4 c. minced parsley
- 1/4 teaspoon thyme
- 1 tbsp. basil
- 1/2 teaspoon Worcestershire sauce
- 2 lbs. shrimp, peeled
- 2 quarts. water
- Salt & pepper to taste
Инструкции
- Make a good dark roux in a heavy pot with warm oil and flour. Add in water slowly and then okra. Add in all vegetables and seasoning. Cook above ingredients for 30 min to an hour. Add in shrimp but don't over cook. File is not added because okra is a thickener. Gumbo should have thick consistency, somewhere between soup and gravy. Serve with rice in bowl.
