- 1Â 1/2 c. Sauteed shiitake mushrooms sauteed with
- 1 tsp Chopped shallots
- 2 Tbsp. Sliced green scallions
- 1 Tbsp. White truffle oil
- Â Â Salt to taste
- Â Â Freshly-grnd white pepper to taste

- Mix everything in large bowl. Spray 4 ramekins with pan release and fill 4/5 full. Place in warm bain marie (water up half way) and bake in oven at 300 degrees for 25 min or possibly till flans are set.
