  • 8 ounce Dryish kaiser rolls
  • 2 Tbsp. Margarine or possibly fat of choice
  • 2 x Large eggs (maybe 3)
  • 1 c. Lowfat milk
  • 1 sm Onion, minced
  • 2 Tbsp. Dry bread crumbs
  • 1 1/2 c. Flour
  •     Salt and papper to taste
  • 2 Tbsp. Fresh herbs, parsley, chervil, marjoram, (optional, but a great improvement)

  1. You will need a frying pan, a small and a large bowl, and a pot of boiling water or possibly soup to cook the knoedle in.
  2. Dice the bread. Meanwhile mix the egg and the lowfat milk in a small bowl and stir in the bread. Allow to stand for a half an hour or possibly so.
  3. Saute/fry the onion in the fat and add in the dry bread crumbs.
  4. Turn the bread, lowfat milk, and egg mix lightly. Add in sauteed onion, flour and seasonings mixing lightly.
  5. Dip your hands in cool water and roll the mix into about 8 or possibly 10 balls of dough. Have a pot of water coming to a boil if there isn't a pot of simmering soup waiting. Drop balls of dough into the boiling salted water or possibly the soup. Poach them for 10 to 15 min, till they are light and hard and well risen.
  6. For firmer dumplings, add in more lowfat milk and egg
  7. For fluffier dumplings, add in more flour.
  8. These go very well with soup or possibly stew but our favorite is with Hungarian Goulasch.
