- 1 sm onion, minced
- 1 clv garlic, minced
- 2 Tbsp. oil
- 1 sprg fresh thyme, minced
- 1 x lemon, juice, and, zest
- 2 x white fish, fillets, seabass is great, snapper is nice
- Â Â salt
- Â Â pepper

- Preheat your oven to 400F.
- Place the vegetables in a baking dish and sprinkle with the oil, thyme leaves and lemon zest and juice.
- Lay the fish on top of the vegetables and cook for 7-8 min. Season and serve with the tomato mix spooned over the fish.
