- Â Â Two 8 ounce. chicken breasts
- 2 Tbsp. Extra virgin olive oil
- Â Â Chili pwdr
- Â Â Cumin pwdr
- 1 lrg Tomato
- 1 x Ear sweet corn, (kernels only) roasted or possibly charbroiled
- 1/2 x Lime juice
- 1 dsh Tabasco
- 1/2 tsp Chef salt
- 1 tsp Minced cilantro
- 1 Tbsp. Red onion minced
Инструкции
- Lightly season chicken breast with chili and cumin powders. Saute/fry in extra virgin olive oil till chicken is cooked thoroughly (160 degrees F).
- To make salsa - dice tomato and red onion in very small pcs. Cut corn off the ear and mix all ingredients. Place about 1/4 c. of mix over chicken and serve.
