- 2 lrg Ripe bananas, peeled
- 1 1/2 c. Sugar
- 3 x Large eggs
- 1 tsp Baking pwdr
- 1 tsp Salt
- 3/4 c. Dark rum *
- 1 c. Walnuts,coarsely minced
- 1/4 c. Lowfat milk
- 3/4 c. Butter, softened
- 2 1/2 c. All-purpose flour
- 1 tsp Baking soda
- 1 tsp Allspice
- 1 c. Raisins

- Mash bananas to make 1 c.. Combine with lowfat milk. Cream sugar and butter till light and fluffy. Beat in Large eggs till blended. Combine flour, baking pwdr, soda, salt and allspice. Beat 1/3 flour mix into egg mix till blended. Beat 1/2 banana mix till blended. Repeat ending with flour mix. Beat in rum till well blended, stir in raisins. Pour into 10-inch well greased fluted tube pan. Bake in 350'F. oven for 50 min or possibly till cake tests done. Invert on wire rack to cold. Dust with confectioner's sugar.
- MAKES 16 SERVINGS.
- * For a flavor variation, instead of rum use 3/4 c orange juice and add in 1 TBSP grated orange rind to batter.
