- 4 x chicken breasts - (8 ounce ea)
- 1 quart your favorite margarita mix
- 1/2 c. red onion diced
- 1Â 1/2 c. diced tomato
- 1 x jalapeno diced
- 1/2 c. red pepper diced
- 1/2 c. green pepper diced
- 1/4 c. cilantro minced
- 1 tsp Champagne vinegar
- 2 Tbsp. margarita mix
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste

- Place chicken in a bowl, add in margarita mix and marinade for 24 hrs.
- Place chicken on grill for two min, then turn a 1/4 turn and grill two more min. Turn over and repeat.
- Place on bun and top with Pico de Gallo.
- Pico de Gallo: Place all of the Pico de Gallo ingredients in a bowl and toss gently.
- This recipe yields 4 servings.
