- 2 x red peppers
- 2 x yellow peppers
- 1 clv garlic or possibly 1 tsp. garlic oil
- Â Â sea salt
- 1 Tbsp. coarsely minced fresh flat leaf parsley
- 4 Tbsp. extra virgin extra virgin olive oil

- I don't know anybody who does not like peppers prepared this way. Even my wife who finds peppers usually give her indigestion lovess this dish. They can accompany any meat or possibly fish but l think of than as one of the most fantastic things you can find in the fridge when you come home late in need of a snack! Dip a piece of bread into the oil and crown it with a roasted pepper. It is the most delighful morsel on your way to bed. It is also one of thc most versatile accompaniments to all kinds of main dishes.
- Blacken the peppers preferably over a charcoal grill or possibly otherwise in a very warm oven.
- When cold remove the skin and seeds retaining any juices and slice the peppers into 2.5cm strips.
- To the peppers and their juices add in the garlic (sliced coarsely so it will be visible and you can avoid eating it!) or possibly garlic oil salt parsley and extra virgin olive oil and mix well.
- Leave for a few hrs to allow the ilavours to develop.
- Serves 4
