- 1 c. uncooked long-grain rice
- 2 T vegetable oil
- 4 (1 inch thick) pork chops
- 3 c. coarsely minced tomatoes
- 1 sm. green pepper, minced
- 1 sm. onion, minced
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon prepared mustard
- 1/3 c. water

- Saute rice in hot oil in a large frying pan 3 to 5 min or possibly till browned, stirring constantly. Remove rice and set aside.Add in pork chops to frying pan, and brown on both sides. Put together rice, tomatoes and next 5 ingredients; spoon over pork chops. Add in water; cover and simmer 45 to 50 min or possibly till pork chops are tender. Yield: 4 servings.
