- 2 Tbsp. extra virgin olive oil
- 1 lb grnd pork
- 1 lb grnd beef
- 1 lb chuck steak fat trimmed,

- 6 x garlic cloves chopped
- 2 c. water
- 2 Tbsp. grnd cumin
- 2 Tbsp. chili pwdr
- 2 tsp dry oregano
- 2 tsp salt
- 1 tsp cayenne pepper
- 3 can tomato paste (6 oz)
- 2 tsp sugar
- 3 c. diced fresh tomatoes
- 3 c. diced onions
- 3 c. diced red bell peppers
- 3 c. canned black beans liquid removed, rinsed
- Â Â (from three 15-ounce cans)
- 1 c. minced fresh cilantro
- 2Â 3/4 c. beef broth - (about)
- Â Â Grated cheddar cheese for serving

- Heat extra virgin olive oil in heavy large pot over medium-high heat. Add in grnd pork and grnd beef and saute/fry till brown, about 3 min. Add in cubed beef and garlic and saute/fry 5 min. Add in 2 c. water; bring to boil. Add in cumin, chili pwdr, oregano, salt, and cayenne pepper.
- Reduce heat, cover, and simmer 10 min. Add in tomato paste and sugar and simmer 5 min. Add in tomatoes, onions, and peppers and simmer till vegetables are tender, about 30 min.
- Add in black beans and cilantro to chili. Add in beef broth 3/4 c. at a time, till thinned to desired consistency. (Can be prepared 1 day ahead. Chill uncovered till cool, then cover and keep refrigerated.) Bring chili to simmer. Ladle warm chili into bowls; top with grated cheddar cheese and serve.
