- 1 qt. chicken stock
- For Soup:
- 2 T olive oil
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 4-5 cups chicken broth
- 2- (4 oz.) cans diced green chilies
- 1 T. ground cumin
- 1 t. oregano
- pinch of red pepper
- 2 cups cooked shredded pork ( or chicken!)
- ¼ cup cilantro, chopped
- Salt and pepper to taste
- Toppings:
- sour cream
- cheddar
- diced jalapeno
- chopped cilantro

.%20The%20thing%20that%20I%20feel%20pretty%20strongly%20about%20is%20simply%20%E2%80%93%20Food.%3C/p%3E%3Cp%3EI%20feel%20like%20there%20is%20a%20huge%20disconnect%20in%20this%20nation%20between%20man%20and%20the%20food%20that%20they%20put%20in%20their%20mouths.%20The%20general%20population%20that%20surrounds%20me%20only%20thinks%20of%20food%20as%20a%20means%20to%20an%20end.%20In%20the%20words%20of%20my%20brother,%20food%20is%20just%20there%20to%20%E2%80%9Cmake%20a%20turd%E2%80%9D%20(%20if%20you%20think%20that%20is%20shocking%20you%20should%20hear%20our%20other%20conversations).%20It%20bothers%20me%20that%20parents%20aren%E2%80%99t%20more%20concerned%20about%20making%20meals%20for%20their%20families%20that%20don%E2%80%99t%20have%20weird%20chemicals%20and%20hormones%20in%20them.%20It%20troubles%20me%20when%20I%20see%20a%20300%20pound%20woman%20walking%20through%20the%20grocery%20loading%20up%20with%20sodas,%20Little%20Debbies,%20and%20frozen%20pizzas%20all%20while%20yelling%20at%20her%204%20year%20old%20who%20is%20bouncing%20off%20the%20ceiling%20while%20drinking%20a%20Diet%20Mountain%20Dew.%20I%20wonder%20where%20choices%20like%20that%20are%20going%20to%20take%20us%20as%20a%20nation.%3C/p%3E%3Cp%3EOf%20course,%20I%20live%20way%20out%20in%20the%20country%20where%20the%20local%20Farmer%E2%80%99s%20Market%20can%20barely%20survive%20because%20many%20folks%20have%20their%20own%20garden,%20chickens%20and%20cows.%20Where%20a%20small%20population%20means%20the%20selection%20at%20any%20store%20is,%20at%20best,%20limited.%20And%20the%20people%20here%20are%20poor.%20The%20average%20income%20is%20well%20under%20$30k%20so%20that%20means%20a%20lot%20of%20people%20here%20are%20on%20food%20stamps.%20And%20I%20understand%20that%20processed%20and%20prepackaged%20foods%20are%20just%20plain%20cheap%20and%20whether%20or%20not%20there%20is%20any%20nutritional%20value%20there%20at%20least%20you%20aren%E2%80%99t%20going%20hungry.%3C/p%3E%3Cp%3EBut%20I%20have%20to%20wonder,%20how%20much%20of%20people%20eating%20the%20crap%20that%20huge%20corporations%20are%20pumping%20out%20is%20need,%20apathy,%20or%20just%20plain%20%E2%80%98ol%20ignorance.%20Is%20it%20not%20common%20sense%20to%20cook%20real%20food?%20I%E2%80%99m%20not%20talking%20%E2%80%9Corganic%E2%80%9D%20this%20or%20%E2%80%9Cnaturally%20grown%E2%80%9D%20that%20(%20although%20those%20are%20all%20good%20things)%20I%E2%80%99m%20talking%20being%20able%20to%20identify%20everything%20in%20your%20cart%20with%20one%20name;%20carrot,%20beans,%20flour,%20chicken,%20milk,%20etc.%20Instead%20of%20potato%20spuds,%20Hamburger%20Helper,%20Freschetta%20frozen%20pizza,%20Tyson%20chicken%20nuggets,%20etc.%3C/p%3E%3Cp%3EI%20think%20people%20believe%20that%20cooking%20from%20scratch%20is%20hard%20or%20somehow%20so%20time%20consuming%20that%20you%20might%20as%20well%20pull%20out%20the%20cow%E2%80%99s%20head%20and%20the%20wood-fired%20oven.%20I%20recently%20taught%20a%20cooking%20class%20with%20some%20simple%20dishes;%20Butternut%20Squash%20soup,%20Foccacia%20bread,%20Braised%20beef%20and%20baked%20apples.%20I%20stood%20in%20front%20of%20the%20small%20gathering%20of%20%E2%80%9Cstudents%E2%80%9D%20and%20showed%20them%20how%20to%20make%20good,%20simple,%20and%20real%20food.%20The%20reactions%20were%20mixed.%20Many%20were%20stunned%20that%20good%20cooking%20was%20so%20easy,%20a%20few%20were%20skeptical,%20%E2%80%9Cwho%20makes%20there%20own%20bread?%E2%80%9D.%20Hopefully%20though,%20those%20few%20students%20saw%20that%20cooking%20from%20scratch%20is%20easy%20and%20delicious.%3C/p%3E%3Cp%3EAnd%20I%20hope%20that%20you%20also%20see%20that%20cooking%20wholesome%20homemade%20food%20is%20the%20best%20way%20to%20go.%20Homemade%20doesn%E2%80%99t%20have%20to%20be%20an%20%E2%80%9Celite%E2%80%9D%20food.%20Homemade%20can%20be%20what%20you%20make%20it.%20It%20can%20be%20cheap.%20It%20can%20be%20creative.%20It%20is%20certainly%20delicious.%3C/p%3E%3Cp%3EA%20pork%20butt%20and%20a%20bag%20of%20beans%20can%20(%20and%20probably%20will)%20feed%20you%20all%20week.%20I%20recommend%20starting%20this%20recipe%20with%20leftover%20smoked%20pork%20and%20a%20bag%20of%20dry%20Northern%20beans.%20A%20little%20extra%20planning%20on%20the%20weekend%20can%20make%20your%20weeknights%20super%20easy.%3C/p%3E%3Cp%3EPork%20and%20White%20Bean%20Chili%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EFor%20Beans:%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3ERinse%20and%20sort%20beans.%20Place%20them%20in%20a%20large%20pot,%20cover%20with%20water%20and%20soak%20overnight%20(%20or%20do%20the%20quick%20soak%20method:%20Cover%20with%20water,%20bring%20to%20a%20boil,%20remove%20from%20heat%20and%20let%20stand%20for%202%20hours%20covered).%20Drain%20the%20beans,%20and%20return%20to%20the%20large%20pot.%20Add%20one%20quart%20of%20chicken%20stock,%20bacon%20and%20quartered%20onion%20to%20the%20pot.%20Add%20water%20until%20the%20beans%20are%20covered%20by%202%20inches.%20Heat%20the%20beans%20to%20boiling,%20then%20reduce%20and%20simmer%20for%201-2%20hours%20or%20un
