- 2 lbs. cubed pork
- 1 pound sliced smoked sausage
- 1/4 c. oil or possibly bacon drippings
- 2 c. onion
- 2 c. celery
- 1 c. bell pepper
- 1/4 c. garlic, diced
- 7 c. chicken stock
- 2 c. mushrooms (optional)
- 1 c. sliced green onion
- 1/2 c. parsley
- Salt and pepper to taste
- 2 tbsp. Kitchen Bouquet
- 4 c. uncooked rice

- Heat oil over medium high heat. Saute/fry pork till brown, about 20 min. Add in sausage, fry 10 more min. Take out all oil except 1 Tbsp.. Add in all vegetables till they are caramelized. Then add in stock, bring to rolling boil. Then reduce heat to simmer. Cook for 10 min. Season to taste using salt, cayenne pepper and black pepper. I suggest which you slightly over season since rice requires extra seasoning.
- Add in uncooked rice, reduce heat to very low and allow to cook for 1 1/2 hrs, stirring at 15 min intervals.
