- 3 lb pork loin, cubed
- 3 x 16-ounce. cans pozole, liquid removed (Hominy)
- 1 c. manteca (lard)
- 2 quart chicken stock
- 2 x Spanish onion, diced
- 3 tsp garlic, minced
- 5 x Serrano chiles, minced
- 8 x Anaheim chiles (roasted, peeled, seeded, minced)
- 2 tsp oregano, toasted
- 2 tsp cumin, toasted
- 3/4 c. cilantro, minced
- Â Â to taste, kosher salt
- 2 x limes, cut into sixths
- 3 x avocado, medium, diced
- 1 x dz. flour tortillas

- MethodHeat lard in large stockpot over medium high heat. Add in pork cubes and brown well.
- Add in onion, garlic, Serrano's, oregano, cumin and caramelize.
- Deglaze with chicken stock and add in pozole, green chile and cilantro. Cook for 20-25 min over medium heat.
- Adjust with salt to taste.
- Serve in large bowl with lime ledges, hot flour tortillas and top with diced avocado.
