- 10 c. Water
- 1 x Onion, peeled and minced
- 1 x Leek (or possibly 2nd onion) trimmed, and halved, washed free of sand
- 4 x Carrots, scrubbed and minced
- 4 x Celery stalks, minced
- 1 c. fresh parsley, finely-minced
- 2 med zucchini, scrubbed and minced
- 1 bn spinach, cleaned well
- 1/4 tsp Marjoram
- Â Â Salt to taste
- Â Â Pepper to taste
- 3 x tomatoes, cut in quarters

- Place all the ingredients in a large pot and bring to a boil. Reduce heat, cover pot, and simmer for 3 hrs. Strain mix if you prefer a clear broth, if you leave vegetables in broth, you have a simple vegetable soup. Serve warm.
