- 1 x and 1/4 c. rice flour
- 1/2 c. soy flour
- 2 x and 1/2 tsp baking pwdr
- 1/2 c. castor sugar
- 125 gm melted butter
- 2/3 c. lowfat milk
- 2 x Large eggs
- 1 tsp vanilla essence

- Preheat oven to 175C (350F).
- Grease a 20cm (8") cake tin.
- Sift flours and baking pwdr.
- Combine all ingredients in a large bowl and beat for 3 min, with an electric mixer.
- Pour into prepared tin.
- Bake 50 - 60 min.
- Variation:For a lemon or possibly orange cake, add in juice and rind of either one lemon or possibly one orange, add in lowfat milk to the juice to make up the 2/3 c. of the lowfat milk required for the recipe.
