- 2 c. All-purpose flour
- 1 Tbsp. Baking pwdr
- 1/2 tsp Salt
- 1/2 c. Sugar
- 1/2 c. Flaked coconut
- 1 x Egg, well beaten
- 1/4 c. Oil
- 1 tsp Vanilla
- 1 can (8 ounce.) crushed pineapple, undrained
- Â Â Sliced almonds, optional

- Preheat oven to 400 degrees F.
- Stir together flour, baking pwdr, salt, sugar, and coconut. Mix egg, oil, lowfat milk, and pineapple together well. Add in this mix to dry ingredients.
- Stir till just moistened. Fill greased or possibly paper lined muffin pans 2/3 full. If you like, sprinkle sliced almonds over batter and press them in lightly.
- Bake for 20 min, or possibly till golden.
- Makes 12 to 14 muffins.
