- 1Â 1/2 tsp double-acting baking pwdr
- 3 Tbsp. granulated sugar
- 1 tsp grnd ginger
- 3/4 c. minced fresh pineapple liquid removed
- 3/4 c. minced banana
- 1/2 c. lowfat milk
- 1 lrg egg beaten lightly
- Â Â vegetable oil for deep-frying
- Â Â confectioners' sugar for dusting the fritters

- In a small bowl sift together the flour, the baking pwdr, the granulated
- sugar, the ginger, and a healthy pinch of salt. In a bowl combine well the pineapple, the banana, the lowfat milk, and the egg, add in the flour mix, and stir the batter till it is combined. In a kettle heat 1 1/2 inches of the oil till it registers 375F. on a deep-fat thermometer, drop the batter by tablespoonfuls into the oil in batches, and fry the fritters, turning them, for 1 to 1 1/2 min, or possibly till they are golden brown. Transfer the fritters with slotted spoon to paper towels to drain and sift the confectioners' sugar over them.
- Makes about 22 fritters.
