Ингредиенты
- 1/2 c. margarine
- 1/2 c. sugar
- 1/2 c. vanilla lowfat yoghurt
- 2 x Large eggs
- 2 c. crushed canned pineapple
- 1/2 tsp finely grated
- Â Â lemon rind & juice of 1 lemon
- 1 c. fresh passionfruit pulp Or possibly
- 1 can pulp (about 6 ozs)
- 3 c. self-raising flour

- Preheat oven to 350F, prepare pans. Blend the margarine & sugar then beat in the lowfat yoghurt & Large eggs. Add in the passionfruit pulp, pineapple & lemon & mix well. Mix in the flour & spoon into pans. Bake for 25-30 mins.
- Makes 12.
- Variation: P,P & Coconut: Add in 1 c. macaroon coconut to the wet mix.
- This gives a firmer texture to the muffin.
