  1. Preheat the oven to 350°F. Line cupcake pans with liners.
  2. With an electric mixer at medium speed beat together the melted butter, pineapple juice, rum, and vanilla until light and fluffy. Add the eggs one at a time, mixing well after each addition.
  3. In a separate bowl combine the flour, sugar, baking powder, baking soda, and salt.
  4. With the mixer on low speed, add the dry ingredients to the creamed mixture 1/2 cup at a time until combined. Fold in the pineapple and coconut.
  5. Fill the cupcake liners three-quarters full. Bake for 20-25 minutes or until a toothpick inserted in the center of a cupcake comes out clean.

    Rum? Is it optional? Can i replace it with fruit juice eg. pineapple juice?

      Tried this recipe. It wasn't bad, but I did add more pineapple and coconut than the recipe called for, but the cake itself seemed too coarse and not as tasty as I had anticipated. Perhaps using cake flour instead and adding more vanilla and rum might add to the flavor a bit.

              can any1 help me with the serving..as for 4 serving it says 17eggs and 6 cup flourisnt that toooo much...or is there sumthing wrong

                Now i've heard of and tried "SOUTHERN COMFORT CAKE", but PINA COLODA CUPCAKES thats a first..it sounds like its going to be a refreshing dessert,however i wont know until i try it.........this shall be a minute folks but ill be back with my review;0)

                        topo gigio - You must not know how to cook. If sugar isn't a dry ingredient, is it a wet ingredient?? Of course sugar is a dry ingredient. And yes...you usually cream butter. And the number of cupcakes it makes is relative to how big you make the cupcakes.
