Well, I wouldn’t be a foodie, if I didn’t love cooking. One of my favorite things is to read recipes and testing them out. If the recipe isn’t vegan, I’m just to the challenge for making it so!
Recently, we were going through some of magazines when Artie came across a recipe for Kale-Pecan Pesto from the January/February 2011 issue of Vegetarian Times. Kale-Pecan Pesto? I never heard of pesto being made with kale before then (spinach, yes. kale, no). Plus, we don’t have pesto very often. So, we both thought it would be good to try for Sunday evening’s pasta dinner.

.%20Plus,%20we%20don%E2%80%99t%20have%20pesto%20very%20often.%20So,%20we%20both%20thought%20it%20would%20be%20good%20to%20try%20for%20Sunday%20evening%E2%80%99s%20pasta%20dinner.%3C/p%3E%3Cp%3EThe%20recipe%20wasn%E2%80%99t%20vegan,%20as%20it%20included%20Parmesan%20cheese.%20To%20substitute,%20I%20used%20an%20equal%20amount%20of%20nutritional%20yeast.%20That%20was%20the%20only%20modification%20we%20had%20to%20do.%20YES!%20EASY%20PEASY!%3C/p%3E%3Cp%3ESomething%20that%20struck%20us%20as%20odd%20was%20having%20to%20cook%20the%20kale%20for%205%20minutes,%20as%20well%20as%20toasting%20the%20pecans.%20I%20would%20have%20thought%20it%20would%20have%20been%20better%20just%20raw.%20I%20supposed%20you%20can%20do%20it%20that%20way,%20but%20we%20wanted%20to%20stay%20as%20true%20to%20the%20recipe%20as%20we%20could%20(minus%20the%20vegan%20changes).%20So,%20next%20time,%20we%E2%80%99re%20going%20to%20try%20it%20raw%20just%20to%20see%20if%20there%E2%80%99s%20a%20difference.%3C/p%3E%3Cp%3EWe%20blended%20all%20of%20the%20ingredients%20with%20a%20little%20bit%20of%20the%20cooked%20kale%20water%20in%20the%20Vitamix.%20Boy,%20did%20it%20whip%20up%20super-creamy%20like%20smooth%20peanut%20butter!%20I%20had%20never%20seen%20pesto%20like%20that.%20So%20either%20we%20ran%20the%20Vitamix%20a%20little%20too%20long,%20or%20using%20the%20kale%20and%20water%20made%20some%20difference.%20We%20did%20add%20a%20little%20sea%20salt%20and%20black%20pepper%20to%20it,%20and%20felt%20it%20needed%201-2%20extra%20cloves%20of%20garlic.%20Nevertheless,%20the%20pesto%20was%20delicious.%3C/p%3E%3Cp%3EThe%20recipe%20yields%20about%208%20large%20servings.%20We%20used%20the%20equivalent%20of%202%20servings%20for%20our%20dinner.%202%20servings%20are%20in%20the%20refrigerator%20for%20pizza%20this%20week.%20The%20rest%20we%20froze.%20The%202%20servings%20for%20the%20pasta%20was%20a%20lot.%20Good%20thing,%20I%20asked%20Artie%20to%20cook%20some%20Gardein%20Chick%E2%80%99n%20Scallopini,%20which%20turned%20out%20to%20go%20nicely%20with%20our%20pasta.%20We%20added%20some%20Zima%20tomatoes%20to%20the%20dish%20which%20kicked%20up%20the%20nutty-kale%20flavor%20even%20more,%20and%20slightly%20made%20up%20for%20the%20lack%20of%20garlic.%3C/p%3E){kind=link}
