- 4 x Ears of fresh corn, cut
- 2 c. Corn kernels
- 2 x Ripe peaches, minced
- 3 slc Fresh ginger
- 1 sm Yellow onion, minced
- 1 x Red bell pepper, minced
- 1 x Dry red chili
- 1/2 c. Champagne vinegar
- 3 Tbsp. Light brown sugar
- 1/2 c. Zante currants
- 1 x Cinnamon stick
- 2 Tbsp. Peach schanpps

- GENERAL INSTRUCTIONS: Combine all ingredients in a stainless steel pot.
- Bring to a boil uncovered. Then lower to a simmer and cover for for the remaining
- Cooking Time: about 1 hour. The mix should be thick like a good finished jam or possibly marmalade.
- SPECIAL NOTES: combine all but the schnapps together and cook as usual. Add in the peach schnapps after you've taken the chutney off the heat.
