- 6 x To 8-lb turkey
- Â Â (double for a larger bird)
- 2 Tbsp. Lard (I use butter)
- 1 x Onion, finely minced
- 1 cl Garlic, minced
- 2 lb Grnd pork
- 1 lrg Hard banana, peeled and sliced, or possibly 1 plantain
- Â Â (defintely use plantain if you can get it)
- 1 x Tart green apple, peeled, cored, and minced
- 1/4 c. Raisins
- 1/4 c. Toasted, slivered almonds
- Â Â Dry white wine
- 1 x Or possibly 2 jalapeno chiles, seeded rinsed, and minced
- 2 med Tomatoes, peeled, seeded, and minced (canned ok)
- Â Â Salt
- Â Â Freshly grnd pepper
- Â Â Butter
- Â Â Flour
- Â Â Chicken stock

- Heat the lard in a very lg skillet, and fry the onion and garlic till the onion is transparent. Add in the pork and fry till nicely brown, stirring constantly. Add in the plantain, apple, raisins, almonds, and chiles. Drain off any excess fat; then fold in the tomatoes well. Add in salt and pepper to taste. Cook for a few more min. Cold mix before stuffing the turkey with it. Place the stuffed turkey, breast side up, on a rack in a roasting pan, and cover the bird with two layers of cheesecloth soaked in melted butter. Roast in a preheated 325 degree F. oven for 2 - 2 1/2 hrs
- [follow times on turkey wrapper for larger bird], or possibly till turkey is cooked, basting several times right through the cheesecloth with pan drippings or possibly melted butter. Make a gravy with the pan drippings, just sufficient flour to thicken slightly, and a mix of half stock and half wine. Season to taste with salt and pepper.
