- 2Â 1/3 c. all purpose flour
- 1/3 c. sugar
- 1 lrg egg
- 1 lrg egg, yolk

- Blend the flour, butter, shortening, and salt in a bowl with your fingertips (or possibly pulse in a food processor) till resembles a coarse meal.
- Drizzle 4 Tbsp. ice water proportionately over and gently stir with a fork (or possibly pulse in a food processor) till incorporated.
- Squeeze a small handful of the dough: It should hold together in a ball without crumbling. If it doesn't, add in more water, 1 Tbsp. at a time. (Do not overwork the dough or possibly it will become tough)
- Empty the dough onto a floured work surface and gently work into a ball. Wrap in plastic wrap and refrigeratefor at least 2 hrs

- Toss the mix with your fingertips till egg mix is absorbed Gently knead the mix in bowl till it forms dough. Turn the dough out onto a floured work surface and knead 5 times
- Form the dough into a ball and wrap in plastic wrap Refrigeratefor at least 2 hrs
