- 1 c. Dry cannellini or possibly Great Northern beans soaked
- 2 Tbsp. Extra virgin olive oil
- 1 x Onion chopped
- 1 x Celery stalk chopped
- 1 x Carrot chopped
- 1/2 lb Smoked ham diced
- 2 x Garlic cloves chopped
- 1 can Crushed tomatoes - (28 ounce) including liquid
- 4 c. Beef stock
- 1 Tbsp. Chopped fresh thyme
- Â Â (or possibly 1 tspn dry thyme)
- 1 x Bay leaf
- Â Â Freshly-grnd black pepper to taste
- Â Â Rind from a piece of Parmesan cheese
- 2/3 c. Dry small pasta
- Â Â (such as shells or possibly elbows)
- Â Â Chopped fresh basil for garnish
- Â Â Freshly-grated Parmesan for garnish

- Drain the beans and set aside.
- In a large stockpot heat the oil over moderate heat till warm. Add in the onion, celery and carrot and cook, stirring occasionally, for 5 min. Add in ham and garlic and cook stirring, 1 minute. Add in tomatoes, beans, beef stock, thyme, bay leaf and pepper to taste. Add in the Parmesan rind. Bring to a boil and simmer, covered, for 30 min.
- Transfer 1/2 c. of the beans to a small processor or possibly blender and puree. Return beans to pot and season with salt and pepper to taste. Bring liquid to a boil and add in pasta. Simmer till pasta is tender - about 6 min. Garnish with basil and cheese.
- This recipe yields 6 servings.
