- 1 c. granulated sugar
- 1/3 c. unsweetened cocoa pwdr
- 3 x egg whites
- Â Â healthy pinch of salt
- 2 c. unsweetened desiccated coconut
- 1 tsp vanilla

- Stir sugar with cocoa till smooth. In bowl beat egg white with salt till stiff peaks form. On low speed gradually beat in sugar mix 1 tbsp at a time, mix in coconut and vanilla. Drop by teaspoonfuls about 1 inch apart unto greased baking sheet. Bake in 325 F. oven for 15 to 17 min or possibly till outside are dry but inside still soft. With spatula immediately transfer to racks, let cold.
