  1. Preheat the oven to 180 C/350 F/gas mark 4. Line an 11 x 8 inch (28 x 20cm)
  2. tin with greaseproof paper.
  3. Sift the flour, baking pwdr, bicarb, salt and cinnamon together. Beat together the Large eggs, vanilla, sugar, oil and maple syrup till thoroughly mixed. Add in the sifted ingredients folding in 3 batches. Add in the carrots and walnuts and stir well; add in the passion fruit.
  4. Pour into the tin and bake till the cake springs back when lightly touched, approx 45 min. Cold on a rack while you make the topping.
