- 6 Tbsp. extra virgin extra virgin olive oil (90 ml)
- 3 lb hen of the woods mushrooms, trimmed and thickly sliced (1362 g)
- Â Â Kosher salt and freshly grnd black pepper
- 2 x shallots, peeled and chopped
- 2 lrg clv garlic, peeled and chopped
- 3 Tbsp. unsalted butter (45 ml)
- 3 Tbsp. fresh thyme leaves (45 ml)

- Heat a large skillet over medium heat. Add in about 1 tbsp. of oil, then add in a large handful of the mushrooms (just sufficient to loosely cover the bottom of the pan). Salt and pepper the mushrooms and let them sizzle undisturbed till they begin to brown on the bottom, about 2 min.
- Turn each mushroom slice over. Add in a little of the chopped shallot and garlic and a little butter and thyme. Continue cooking the mushrooms till they are tender, moving them around in the pan from time to time, about 2 min more. Transfer the mushrooms to a plate lined with a paper towel. Wipe out the skillet and repeat till all the mushrooms are cooked.
- To serve, wipe out the skillet one last time and heat over medium. Add in a skim of oil. Add in all the mushrooms, some salt and pepper, and some fresh thyme leave and butter if desired and cook, tossing the mushrooms in the warm pan, till they are heated through.
